GAIA'S PLATE selection
organic EXTRA VIRGIN OLIVE OIL
about this year's harvest 2025
Eva and Leonardo have managed Leonardo’s late father Pietro Beconcini farm since 1995 and are really passionate and knowledgeable about wine making and olive oil.
This 2025 Certified Organic Extra Virgin Olive Oil is a special selection fro Gaia’s Plate and it comes from the nearly 1000 olive trees scattered on their land.
It’s a blend of the traditional Tuscan varietals: Moraiolo, Frantoio and Mignola.
The olives are handpicked in November and milled within 24 hours of harvesting at a state of the art milling facility near the farm.
They are cold-pressed at temperatures below 27°C, in complete absence of oxygen to avoid oxidation
WEATHER
The season had its excesses and peaks of rain, heat and cold, but it never turned out to be a season that we would describe as problematic, until the dreaded Olive Fly arrived. Organic farmers are not allowed (and they proudly choose not) to use any pesticides so Leonardo and Eva monitored the health of the olives using traps and sampling. Since olives attacked by the fly (where adults would lay their eggs) dry up and fall, my friends decided to harvest early right after a day of strong winds which dropped the infected olives.
As a result, they collected only the healthy olives even if it meant production plummeted to 25% . Making olive oil is a true labour of love and the being able to produce such a high quality oil in a difficult year such as 2025 it’s a testament to Leonardo and Eva’s dedication.
TASTING NOTES
Colour: Intense green.
Taste: Full-flavoured with crisp, fresh green vegetable notes, particularly artichoke, and a tasty vein of pungent pepperiness. A true Tuscan olive oil with a remarkably piquant distinctiveness and lingering aromatic notes.
Nose: Fruity with some green leaf aroma; clean-edged fruity fragrances of green olive, with nuances of artichoke and thistle
Pairing: wonderful drizzled directly on lightly-toasted artisanal bread and on raw vegetables. Add it as a finishing touch on soups, pasta or light fish
